VINEYARDS: Sonsierra perfume was made from the best selection of our old vineyard, and we have selected the most promising wine vineyards. The harvest was made at the time that the vineyard was in its optimum physiological and phenolic ripeness.
VARIETY: 100% Tempranillo.
PREPARATION: The preparation of Sonsierra perfume was made in stainless steel tanks at 26 ° C for 10 days. Then the must was macerated for 4 days in order to achieve maximum extraction of color. Malolactic fermentation occurred in new French oak barrels.
AGING: The barrel aging has been carried out for 16 months in a selection of 30 French oak barrels. After this time Sonsierra was bottled perfume to continue aging in the bottle for a minimum of 8 months.
TASTING NOTES: Color cherry robe, brilliant. In protruding nose fruity (strawberry, currant, licorice) very well conjugated with the aromas of aging, especially coffee, roasted and toasted. The palate is long, balanced, round, with a good entry and high persistence.
