The signature wine of California.
Stephan Asseo could be considered a classic winemaker. Learned his trade in Burgundy, but he practiced for 17 years in Saint Emilion, Bordeaux. In 1998 he decided to go to the "adventure", he left everything he had in Bordeaux, and after considering several options (Spain, Australia, South America, ...) was seduced by Paso Robles, California. The main reason for going to America was free from the corseted standards of Bordeaux. In California had absolute freedom and took it. The first was to choose a floor with large deposits of fine-grained silt mixed with clay. Thermal variations of almost 40 °, and microclimates to plant different varieties (Cabernet, Syrah, Grenache, Mourvedre, ...).With a unique terroir, its great experience and the latest in technology, only wanting to name their new winery: "L'Aventure".
Asseo is a master in the art of blending wines and almost all benefit in different proportions varietals. Many mixtures are atypical in California Cabernet with Syrah, Cab with Syrah, Zinfandel, Mourvedre and Petit Verdot. Its wines have been recognized with great scores and great reviews, are different wines, very powerful, with large amounts of alcohol, but very drinkable and enjoyable with food. In his words, "... could make a wine that will appeal to journalists, ... but I like to make wines to enjoy ..." All of their wines are produced from grapes selected by hand, cold maceration, fermentation at controlled temperature and a very low production.
