It is the first vintage that uses the native variety Callet, to develop, along with the Premsal, this white girl. Fermented and aged on its lees, get a fresh wine, elegant and varietal.
Preparation: Harvest in small boxes of 10 kg in a chamber cooled to arrive at the winery. Manual selection of the grapes on a bed of dry ice to prevent oxidation. Cold maceration Premsal about 12 degrees for a period of ten hours in carbonated atmosphere. After pressing it comes to racking in special tanks to move to the fermentation at about 17 degrees. Fermented and aged on its lees for about three months in stainless steel tanks of 7000 liters. The production is limited to 20,000 bottles.
